The CHampion actually did a piece on people like that last year. The fact that some people cannot digest gluten is because of a medical condtion or something (if Im remembering the article correctly)

WRONG

"Gluten Wheat Pizza"

We have wheat dough as well, have had it for about a year. Very good for wierdos who like to eat healthy.
However we got this Nona's Pizza with fresh flum tomatoes, basil, and fresh mozzarella on wheat. VERY GOOD maybe the best pizza we have. Im not sure if $23 is worth it but what the heck?

Gluten is a protein in wheat (and in a few other things). There are people like me that are allergic (it's complicated, wheat allergy and gluten intolerance are two different things but basically hand in hand as all wheat contains gluten) to it. If I eat enough of it I run my risk higher of getting fun things like stomach cancer, lupus, thyroid disease and the like. If they've somehow found a way to make a wheat based pizza without gluten, I'll personally drive to Virginia and buy the pizza chain. For now I have to eat rice based pizza crust, which tastes like tomato and cheese on cardboard.

The Chain/Store they are referring to is a PA/NJ area thing, from what I understand.
