Is this crazy to even talk about or is this something that was expected. Nick Saban leaving a dynasty to return to the NFL?

I doubt if he will leave Alabama. He would be crazy if he did. Most college coaches who go to NFL, are not successful. See Chip Kelly, Steve Spurrier among others.

I have to guess that his failure with the Dolphins grates at his ego to this day. Proving he could win in the NFL has to be a tantalizing proposition. But with his experience, he is probably looking at situations where he is more likely to experience success with the key pieces in place. That doesn't seem like the Giants situation.
