I don't see the problem. BYU apparently doesn't either. This is copied from their Honor Code.
Just pointing out a slight difference: But how many people that BYU plays actually travel to the middle of Utah to watch the game, plus the surrounding area (and state for that matter) is predominantly Mormon-influenced. LU will be trying to draw fans in from Central Virginia, in which it is no secret that it is a stronghold of UVA and Tech.
Plus, if LU wants to keep its stance, and followed a similar code as in the BYU handbook, they could still offer a separate tailgating area to accomodate and encourage visiting teams fans to come and add to the ticket sales and the LU students wouldn't be inviolation of:

No one is saying serve it in the stadium, although that would be an interesting day in LU athletics (won't happen, and I'm not endorsing it either way.) Although, they could fire up some ol' Liberty Lager (for Medic) with any old distillery parts left over from the 1920's Lynchburg era. Here is an interesting tidbit from the Tournament Materials that they distribute for the Debate Tournament LU hosts:
Special Announcement: Alcoholic beverage consumption is not allowed on
the Liberty University campus. Smoking is only permitted outside the
academic buildings. Please do not smoke in the public lounges or
classrooms. Your adherence to the no smoking request will help to
guarantee a pleasant visit.
Just an interesting observation: Smoking is permissible, but alcohol is not.
