4th of july bbq

tomorrow i pick up 16-18 pork butts and 6 briskets.

i will be smoking them tomorrow night for our church picnic.

i should have pics running throughout.

the pastor that is helping me decided to have some of his college kids come and help...not sure what will happen here...

i have my micah moo faux cowhide apron and i'm ready to go.

the few pictures i took are at home on that computer.

i did 24 pork butts and 6 briskets....and only having 3 of us meant that there was little time for pictures.

and then when i did have a chance to take some pictures 1/3 of the way through, the camera's battery died. then when that was charged and i remembered it, the card was full. then i finally got it working around done time and we were in such a hurry i forgot about taking any more...

i made my own rub (lots of it), made about 3 gallons of sauce, and smoked 30 pieces of meat. it was quite exhausting.

then around 5 in the morning the rain poured down....it got frustratiing....we were expecting 250-300. only 150 showed up. there was 1 1/2 roasters still full of pork when most were done.....i brought zip locks and let people take that home...that was about 4 butts right there and i also had 2 briskets and about 10 butts still sitting in coolers in the back of my truck.

the pastors each took a butt home and a butt to each of my helpers and i put the rest in the churches deep freeze for our celebrate recovery program.. took a brisket and half a butt home for myself...

everyone that was there, loved it though....

yeah but I have a pile of year old oak/maple/cherry/hickory I've got to use up.

I don't use a lot of mesquite.

when I'm smoking pork I like maple/hickory
when I'm smoking beef I like oak/hickory
when I'm grilling pork I like apple/maple
when I'm grilling beef I like oak/orange/lemon
