its is a prime grade short loin. 4 days old right now. a week and half more and she should be done.
i'm still contemplating cutting it into filets and strips. if i cut it into porterhouses, i'll have to buy a new bandsaw blade for the bandsaw here at work.
we got this from a guy we know who happens to know a higher up at Tyson (IBP). we got 20 of these for 4 bucks a lb. this one was 20 lbs. these are normally 25-30 bucks a lb.

Aged beef is the best. Unless it's buffalo.
I thought you were showing off a new machine to age the beef. Either way you've been living the dream lately.

Do you not like buffalo or just saying that it's not good aged? I've pretty much made a 100% swtich to buffalo when it comes to ground meat.

I mean Buffalo is the best overall. I need to make that switch too. I've never had it aged. But I got to think that would be excellent.

we have a farm here locally that wetages it. its too lean to dry age.
its delicious.
