Now that the topic has been brought up, we might down some leftover turkey tamales from Christmas we have stashed in the freezer. Perhaps I've just never been exposed to the proper turkey burger, but I am seriously down with bison, ostrich or kangaroo burgers. The latter two are in short supply around me until I head back Down Under in a couple of months. The bison meat holds the flavor or marinades exceptionally well.
