Do you mean Daddy Bim's? If so, their cook used to be the personal chef of Don Johnson (of Miami Vice) back in the '80s. Good food, but not great.

I think that's the place. The wife and I got takeout there once and it was just plain nasty. Tiny portions for a lot of money and none of it was worth a cent.

But....got one of these about 3 weeks ago. I have since smoked 1 pork butt....4 racks of BB ribs...and 4 beer can chickens and an apple crisp. Best investment I have ever made!

BTW...if any of you are looking for advice/tips on BBQ'ing or smoking, this site has been invaluable to me. I have learned so much from this site. They are a good group of folks.

this is similar to the smoky mountain...

for me, the minion method is the key to easy smoking....now if you are a competition guy, there are judges that can taste the unlit coals but for most its unnoticable...just don't buy presoaked briquets...

the minion method is simple.

fill the bottom with unlit charcoal and wood chunks...light about 10 briquettes...once they are done, spread them on top of the unlit briquettes....put a few chuncks of wood on top of the lit briquettes...10 minutes later it should be smoking pretty good...it will probably get somewhat hot pretty fast....300-400 degrees....let it rest a bit and after toying with the air vents, you should be able to get it to 235 and i can get my wsm to stay at 235 for about 12-13 hours.....my smokenpit for only 7-8 hours on a good day....

or you can forgo mixing wood chunks in with the unlit charcoal and just put chips on every hour or so...

google "minion method" and i think the first link is an in depth step by step to doing it...

Mallett...I love the CharGriller so far. It has been really easy to maintain temp control...great flavors and extremely versatile. I still use the Weber for simple grilling...steaks, pork chops etc.... I am trying to figure what I want to smoke this weekend. I am thinking about trying a brisket, but not sure if I have the time for it or not.

Scorcho...as soon as you start smoking, it will be extremely addictive. Definitely go with what RM said about the Minion Method. I found that using that, I can maintain temps from 225-240 very easily for 4-5 hours with no trouble. Using a water smoker like you have, it may even be easier. I know that the WSM like Mallet has is very easy to maintain temp control. It is definitely one of the best smokers available.

The Minion Method sounds very interesting. I will most certainly be giving it a shot. The only problem is...I have no idea when. I hadn't thought I'd get to go to any away football games this year and now I'm going to two in a row.

When it says use a chimney starter, I highly recommend you do. It makes lighting charcoal so easy. Get the Weber model...it is the largest on the market, and also works the best. You can pick one up at Home Depot for about $12.00.
