Yes, it is true there are BBQ festivals of much greater size (and likely quality) here in Texas. Unfortunately they are not close by Houston but over in my old Central Texas stomping grounds.

But they are nearly all beef affairs and I loved pulled pork as much as the rest of you. Here in Texas the brisket, beef sausage and ribs are the main fare.

I got north carolina style bbq one time. i looked at it and thought it had gone bad, then i ate something and it confirmed my suspicions. turns out it was actually supposed to look and taste like that...it was simply one of the most revolting foods I have ever seen and tasted.

KD's BBQ - Midland, Texas. Not that I expect you to road trip there, but that was some amazing brisket.

I'm a big fan of Texas bbq. I've had very little experience with Carolina style bbq and haven't liked it much. But I am keeping an open mind until I eat at some of the big name places in North Carolina.

I just had Eddie's bbq in Ruckersville after the wife and I visited Barboursville Winery (sp?). The sauce reminded of a Texas - Carolina blend, so I asked Eddie and he said that was exactly what it was. It had a strong vinegar base with a strong peppery taste, too. He was from Arkansas and had combined the two styles. I highly recommend. For $6.50, I got a fat ol’ pulled pork sandwich, some fries, and 20oz bottle of soda. Not too bad. His co-worker gave me a tour of the pit.

Back to the original thread – I’ll be in Lynchburg next summer so maybe I can make Sedalia.

hmmm, Eddies sounds a lot like the style that I enjoy. I'll have to check that out next time I have to make a drive up north.

While I was in Savannah this weekend I tried the BBQ at a place called Blowin Smoke BBQ not far from the Savannah Civic Center (where one of my other sisters was graduating this past weekend) and I really liked it. The sauce definitely had a kick to it (they have Kansas City style ribs on the menu there as well.

Somebody is gonna have to see if they can pack up some BBQ gear and bring it down for the football opener. Nothing like having some ribs along with the usual fare that last Saturday in August

I thought it would be pretty cool to smoke stuff at tailgates but it takes like 6-12 hours depending on what you're making. That's a pretty long tailgate.
