My thoughts:
Most waiters/waitresses are students and/or young people. I don't envy the younger adults/middle aged waiters----most of the time, no health insurance, no dental, no life, nothing.
That being said---waiters who are young (on mom/dad insurance) can make a killing. Had a couple g/f's in college who could bring home 2,000 a week, while I made my piddly cash playing poker/working retail/working amusement park/working for school/working for census bureau (that wasn't piddly, take that job! 15 bucks an hour and you can work 10 hours a week and report 40, not to mention the stories you have).
I think the system works well---great for the majority that are students, something for those not educated, extra cash as a second job.
I do the normal 20% probably 85% of the time, 5% for bad service, and a little more for good.
